When I started baking, one quest of mine was to get the near perfect (for me) Chocolate cake. So we made a few of those and added them to the menu over the years. Now this is my attempt at a cake which walks the fine line between chocolate and vanilla and not too much of either, especially meant for folks who do not want intense chocolate.
As always, we started off with the cake which is a cross between a sponge and a pound cake. We wanted lightness but more than that we were after flavour and butteriness. So the cake is slightly heftier than a regular light and airy sponge. Each layer is filled with a caramel flavoured custard cream and then everything is covered with a beautiful, silky, not too sweet Chocolate buttercream. To add texture, we sneaked in some chocolate hazelnut crumb in each layer and then some on top. The combination truly works.
This Vanilla Chocolate Dream Cake is a far cry from the boring, dry, too sweet or gritty ones that we ate as kids. Instead it is buttery, vanilla-y, chocolatey & caramel-y with all the different textures & flavours magically coming together in one tall & majestic three layered beauty. Hope you all taste it.
