We have been testing and retesting this one. Firstly, being absolute coffee fiends, our Tiramisu needed to have a nice & strong hit of coffee. We make our own lady finger/ biscuit sponge for this as always, which is through and through soaked with freshly brewed moka pot coffee spiked with a generous amount of Kahlua. To further supplement it we also add a layer of coffee jelly in the middle. Finally the mascarpone cream. It's luscious, custardy, creamy and just sweet enough to offset the rest of the flavour. The layers also get a shower of grated 80% manam chocolate instead of the sometimes powdery finish of the cocoa powder.
Overall it's a juicy, creamy, boozy and cold treat perfectly suited for the already warm weather. We think it's a smashing way to finish a meal but a spoonful or two any time of the day is encouraged - what a wonderful way to get one's caffeine fix, don't you think?
