Sesame Chocolate Chip Cookie (Eggless)

 I rarely eat cookies. That's a big confession to make since I'm a baker by choice and we do have quite a few cookies on offer. So let me qualify my statement. Since I started baking, it's always been my intention to create cookies of my liking, which we hope also appeals to you.

Balanced sweetness & saltiness, interesting flavour combinations and textures are what we are after. This cookie fulfils all these criteria. The base is that of a buttery, not too sweet Chocolate Chip but we have used caramelized sesame (with jaggery) as a beautiful nutty addition along with cranberries for pops of brightness. We use Mason & Co chocolate here which is dark, bitter and fruity. Overall, it's an ultra chewy, salty & grown up version of a Chocolate Chip Cookie, yet will do perfectly well paired off with some ice cream (this has been on repeat over here) or a glass of milk. Also, it happens to be eggless and refined sugar free!
