Lime Curd

We use local organic limes for the curd and make it the old school way with eggs, raw sugar and butter. We keep the sweetness optimal to lend the curd a bright, tart flavour that pairs perfectly with most cakes and as a topping for pancakes, biscuits, ice creams or on top of good old toast for that matter.
This winter, with an abundance of oranges, we decided to make a version of this curd with oranges and limes which makes for a beautifully bright, citrusy variation.
