Recently we tasted an Italian Spread that someone brought back and instantly liked the tart, punchy flavours and juicy texture. We happily had it topped over bagel & cream cheese and once we ran out, decided to make it ourselves.
Here we cook down a whole bunch of vegetables like eggplant, peppers, mushrooms etc with herbs, fennel, chillies and aromatics. This gets finished with vinegar, two types of olives, capers and extra virgin olive oil.
This super versatile relish can be used in various ways - as a dip, folded into a cheese sauce or simply some boiled pasta, as a spread for sandwiches, as a garnish over soups, stews and stir fries. Of course, we use it liberally over fried eggs too.
