Yes, life's all about eating healthy, balanced meals. AND protein. Those are the buzz words these days and healthy fats. We are suckers for it as well and include all these principles in our daily habits. But balance for us also means leaving room for indulgence of the soul other than that of the mind and body.
This spiel is a roundabout way of saying that we unlocked a core memory with this cake - the kind that I remember getting from the neighbourhood store/bakery as a slice, neatly packed in a slip of plastic - a worthy treat in my younger days. This memory followed me to Pune during my years of pursuing an MBA. I would walk out early AM to the nearest Mongini's to get three vanilla muffins - breakfast for myself and my two roomies before a frantic run to our early morning class.

We have all indeed come a long way from there but the cake remains, in the form of our Everyday Teacake. Moist, just sweet enough, with a whiff of vanilla & coconut - as always made fresh with good ingredients, waiting to take you to a different place.
