Shippable (Pune only)
This combines my love for meat filled buns (Hot Breads, Chennai was a favorite) as well as my mother's mutton grill. We are not sure where she picked this up from but being an exceedingly curious person she collected recipes from all over (travels, neighbors, magazines). Here the mutton is simply marinated in yogurt, green chilies, onion, ginger & garlic and then caramelized in ghee. One of my favorite things to eat at home, we always had it with perfectly square pieces of white bread. So in this version we fill the cooked mutton inside a buttery pao.
Sprinkled with an everything bagel kind of mix & baked, it's a delicious snack by itself. Eat it with green chutney, imli chutney, sauce or nothing at all. Edible piece of nostalgia right there.
