Chocolate Mousse & Plum Cake

We made a tart with these flavours recently and liked it so much that it's now a cake and permanently on the menu!
It comprises two layers of ultra moist chocolate sponge which sandwiches a thick, creamy and luscious layer of Chocolate mousse. Hiding within the mousse is a tart & bright house made plum compote which is a perfect foil to the dark chocolate goodness. Just for fun we also added a house made feuilletine and almond praline crunch layer - the fact that it adds a beautiful texture is the cherry on the cake.
As a final flourish the whole ensemble gets enrobed in a soft set sourcream ganache and a few candied almonds. This cake is sure to be a spectacular and decadent end to any meal but in our humble opinion it's even better savoured as a personal moment of indulgence (which we highly encourage).
