This one gets baked low and slow in a water bath giving it an utterly creamy yet light texture. Addition of Mascarpone makes this cheesecake less dense and the nutty biscuit base complements it perfectly. With a good citrus hit, it begs to be eaten with a pot of coffee alongside. Makes for a fantastic dessert. Uses Mooz dairy products.

The 7 inch cake serves 8 to 12 while the 9 inch serves 12 to 16 depending on how generous you're feeling.
