Honey & Graham Cracker S'mores Cake

For this cake we were inspired by the flavours of S'mores (hence the name) and it will, fittingly, remind you of toasted marshmallows, hot buttered toast, campfire and biscuits.
We came up with a honey & sour cream sponge for this, lending it heft instead of the usual light as air texture. The sponge turned out incredibly moreish and makes for a delicious teacake on its own. But here we have filled it with a salty chocolate malt custard, finally frosting the layers with a surprisingly complex toasted honey meringue buttercream which literally smells of campfire. Whole wheat Graham Cracker style biscuit crumb not only provides crunch but also extra oomph. Altogether, the cake is toasty, buttery, creamy, with hints of chocolate & malt. A very grown up S'mores indeed.
A 6-inch three layered cake will easily feed 8-10, while the 9-incher is good for about 18-20. We are also making this into a single layer number, apt for smaller gatherings of 4-6, although it's perfect for a *party* of one.
