We cook the mushroom low and slow in Olive oil, garlic, chillies, thyme and a bunch of kalamata olives. This intensely aromatic and umami flavoured confit can be used in multiple ways. Use it for pasta or for frying toast/ eggs. Add a bit into stir fried vegetables to add instant flavour or into soups & stews. It's very versatile and keeps well in the fridge.
