Double Chocolate Miso Cookie

Let us start by talking about the miso we have used for this cookie. It is made right here in Pune, in a fermentary called Ground Up, with Indian grains while using time honoured Japanese techniques. If you usually have miso on the shelf for regular cooking, I urge you to try theirs.
Coming to the cookie, we were inspired by the beautiful miso we have access to. This is a super chewy, soft and moreish chocolate cookie which offsets the natural saltiness and funkiness of the miso beautifully. We have added miso jaggery caramelized cashews & cacao nibs along with bits of mason & co 70% chocolate chunks to the dough, which takes the flavour and texture to another level.
This is one cookie that screams to be sandwiched between some ice cream so if you get your hands on it please make one and let us know what you think!
