Coconut Cherry & Dark Chocolate Blondie

I never understood the point of a Blondie - it always appeared as a weak version of a Brownie, way too sweet and dry. We were tempted to give it go recently as we thought of using coconut & cherries in something hand held and uncomplicated and without the overwhelming big brother vibe of chocolate.
Here we have treated the Blondie as a giant cookie (which in a way it is). We went hard on the toasty & nutty notes with wholewheat flour, brown butter, brown sugar & caramelized coconut. The dried cherries provide the much needed contrast and brightness while the dark bitter chocolate (67% Manam Chocolate) is the side kick that balances the overall sweetness perfectly.
The Blondie is baked just so, lending it a moist and chewy texture. Overall, it's an excellent treat and we were surprised by much we all loved the flavour & texture on this one.
