Chocolate PBJ Cookie Sandwich

We have been wanting to make a Peanut Butter Cookie since forever, never landing on the right texture or flavor. This cookie brings it together effortlessly. We have combined a few components here that produce a super interesting interplay of flavours and textures. The cookie itself is crispy, chewy & deeply chocolatey with a background flavour of PB (which is house-made). The cookies get sandwiched with a Chocolate & PB cream while hiding a pool of strawberry jam. The final flourish is a shower of chopped toasted peanuts. Seemingly decadent but oh-so-perfectly balanced and will go equally well with a cup of coffee or a glass of milk.
