January is a weird month. The flavour and vibe changes depending on who you ask. There is hope & resolutions for the road ahead but also wistfulness for time gone by. For most people, it is also about taking care of self and eating right, especially after the gluttony of the festive season.
All this brings us to this new flavour of Granola we have been eating on repeat here. There is a nip in the air still - a hot mug of coffee pairs well completing the breakfast (although it'll make a very respectable meal anytime of the day).
Here we have a mix of rolled oats, house made peanut butter, toasted peanuts, pumpkin seeds, honey, olive oil & mashed banana (there is no residual flavour of banana but it helps bind the granola without too much fat & added sugar). Finally we add a generous handful of cranberries and dark chocolate chunks to it right after the bake.
We love eating this with yogurt but milk will do great (chocolate milk maybe?), however it makes for a great snack just on it's own.
